  2. Pour the oil over the vegetables and lemon, add a few grinds of salt and black pepper and toss to mix.
  3. Spread onto a baking sheet and roast in a hot oven for around 20 minutes until the edges are crisp and the stems are tender.
  4. To make the chipotle sauce. Whizz all the ingredients in a food processor until smooth. If using cashews instead of the skyr, add water a teaspoon at a time until the texture is smooth. Place in the fridge to thicken.
  5. Add the lentils, walnuts, mixed seeds and drizzle with 2 tbsps of the chipotle sauce.
