These buckwheat beet wraps are ready to roll up veggies and lean proteins for a fortified lunch. Disillusioned by the mass-produced gluten-free wraps available, I decided to come up with my own creation for the yoga-eating masses. In medium bowl, combine beets, onion, capers and lemon zest. Sprinkle beet mixture evenly over spinach.

Steps to make Beet wrap:
  1. Soak rice overnight and grind them in the morning including grated coconut until smooth. add pinch of salt to it and keep it aside for fermentation for about 7-8 hours.
  2. For the stuffing, add oil in a pan. add some mustard seeds and hing them. then add boiled and mashed potatoes. cook it for 2-3 minutes. add all the masalas and cook it for 5 minutes.
  3. For preparing the neer dosa,add some beetroot juice to the batter and stir well. take a non-stick pan. heat it and brush some oil. pour the batter and give it a circular shape.
  4. Cover it with a lid and let it cook. take it out when one side has been cooked. flip it and remove it from the pan. (do not cook both the sides)
  5. In the neer dosa add the stuffing and roll it.
  6. Your beet wrap is ready.

Wrap each roll tightly in plastic wrap. Add the hummus and beet cubes into the food processor and pulse to obtain a creamy mixture. Divide it evenly onto the tortilla wraps, and spread with a spoon. Divide the rest of the ingredients on each wrap, roll the tortillas, pack to go, or serve immediately. Scrub the beets thoroughly, then wrap them loosely in aluminum foil.
