The ingredients needed to make Navratri Kheer or Rice Pudding:

This day is referred to as Mahanavami. On this day, a Kanya pooja is performed. Kheer is Indian version of rice pudding made by slow cooking rice in milk with addition of fragrant ingredients like saffron , cardamom, rose water and generous amount of nuts. It is sweetened with sugar or jaggery.

Instructions to make Navratri Kheer or Rice Pudding:
  1. Soak the rice for an hour. - Bring the milk to a boil, reduce the heat, and simmer, stirring occasionally until reduced to half. - Add the soaked rice to the milk. Keep stirring occasionally till the rice softens and the milk becomes thick. - Add the cardamom and the sugar and simmer the mixture until it reaches one-fourth of it's original volume, and is thick and creamy.
  2. Serve garnished with the almond slivers. - The Kheer looked too virginal and plain, so I added some rose colour to the almonds and gave a pretty pink hue to my rice pudding.(see. I am so feminine) - Serve hot or cold according to taste and weather.

And the best part it doesn't contain eggs. A creamy, delicious kheer/pudding made out of ground rice. You can set it in individual bowls too!! Also if the kheer/pudding does appear lumpy after the rice is cooked, run the hand mixer/whisk through the kheer/pudding before the raisins and almonds are. kheer. According to Ayurveda, the three Doshas are mainly responsible for the proper functioning of the human organism.
